Make Room For Shrooms

Do you think Oyster Mushrooms can prevent the growth of breast cancer cells? This question just popped into my head now that I’m starting to be conscious of what I eat because I’m already at a high risk for breast cancer.

All we ever know about mushrooms is that they are a great alternative to meat, especially if you’re watching your cholesterol levels. I did my research and I found a study on Oyster Mushrooms and their role in preventing breast cancer and colon cancer.

This wasn’t my original purpose actually why I started growing Oyster Mushrooms here at home. I wanted to learn how to grow them as part of the basic survival training I am doing in preparation for any massive disaster.

Oh so white, so pure. ❤

If ever I see this type of mushroom while foraging, then I would know that it’s edible. And if my survival tools are still complete, I’ll try growing the mycelium.

This is what I want to try now, but the process requires sterilizing the tools and equipment constantly while collecting mushroom spores and putting them in the fruiting bags. Btw, I got the mushroom fruiting bags from Pinong Farm.

The fruiting bags are about 1 foot long each, quite bigger than the ones commonly sold in other online stores. I have been able to harvest thrice already, and I am expecting more harvests since the mycelium is still forming out of the fruiting bag.

How To Grow A Mushroom In A Fruiting Bag

A lot of people who’ve tried mushroom farming say that growing mushrooms is very easy. You won’t need soil, pesticides, and fertilizers to grow them. In my experience, however, it’s not really that easy. Here are some reasons why.

1. Room Temperature

Fruiting bags need the right amount of moisture to encourage mycelium growth. Too much moisture in the environment will trigger mold growth, and if the environment is too dry, there will be no mushroom growth at all.

2. Constant Misting

We live in a coastal area, so there are days when the weather is too dry. When this happens, I would notice that the mycelium grows very slowly. Whereas if the fruiting bags are always moist, tiny fruits grow really fast.

3. Avoid Contamination

Everything that you use for growing mushrooms always has to be sterilized. Make sure to wash your hands when harvesting fully grown mushrooms. And also remove any remaining stem parts to give way to new mushrooms.

4. Pest Control

Rats love to take a bite at them. For safety purposes, discard the rest of the mushroom that has a rat bite. It is also best to keep the environment clean to avoid contamination.

5. Patience Is Key

The first fruits take some time to come out, around 25 days. So it will really test your patience. But when you do see the first fruits, it will be love at first sight. 😍

You can then start harvesting your mushrooms 3-5 days after they come out. I’ve tried cooking them as adobo mushrooms, but fried mushrooms that are coated with Crispy Fry are my favorite.

Even my Dad was astonished after trying the Mushroom Chicharon for the first time. He said that the fried mushrooms do taste like real chicharon or pork cracklings. 😃

Container Gardening 101: A Drive Towards Local Food Movement

It’s just funny how a tiny sign of life no matter how minute it is can be enough to give you the hope that you need. Much like humanity these days. Every single sign of life, we get to appreciate more and more with each passing day.

These are the roots of the mustard greens I planted. I didn’t do my research on how to propagate mustard greens so I ended up cutting the entire plant and leaving just a one-inch stub above the roots. When I searched the net, all the propagation info I found suggested cutting all the leaves but leaving the center as is since it’s a rosette.

I was close to giving this plant up after not seeing any progress for 5 days. But hubby told me to give it a couple more days. The next day, new leaves came out. Yay! Indeed, it is one resilient plant, and yet I am still praying God will let them grow well.

This is my first time to grow this plant along with other vegetables i. e. tomatoes, spinach, garlic, and green onions. So we’ll see in the next couple of days if my own style of “cut-and-come” method is successful. I almost killed it. 😂

We also have other challenges in growing these vegetables such as minimal sun exposure and very strong winds during the day. I guess in this case, I’ll just ask the Great Gardener, Himself, to watch over them for me. 🙏❤️😊

Imagine God’s Paradise Where Food Is Unlimited, But We Never Gain Weight

I’m sure most of us will agree one way or the other that this lockdown and being at home have somehow placed our attention on food. Before the quarantine was implemented, most of us had very busy lives we just never had the time to appreciate good homecooked meals.

Yes, we all got used to “instant” everything because it was convenient given our busy schedules. Now, I believe every household smelled of the aroma of garlic and onions being sauteed and freshly baked goodies. We just have no choice if we don’t want to eat canned goods every day. 😀

Best Meal I’ve Ever Had

The movie “The Shack” resonated deeply with me and gave me hope in these moments of crisis and uncertainty. There’s this one scene where God played the role of a woman named Papa (Octavia Spencer) who lives in a very lovely shack (my dream home) in the woods surrounded by a beautiful garden. It’s basically the type that we’re all craving for here in this world.

It’s this kind of paradise that offers a perfect ambiance of peace and quiet, and yes, that part where she (God) whips up the most delicious meals ever. I believe God is showing us right now a glimpse of what heaven will be like after we overcome the trials and sufferings of this world.

What It Means To Be Truly Living

It portrays the ideal moment of living life without so many distractions, and yet we all know isn’t just possible to attain in this world (yet). What if God allowed this pandemic to happen so we can have a taste of what it really means to be truly living?

Besides, this world wasn’t made to last. And yet we can all look forward to an everlasting home that serves good food (literally and figuratively) all the time that not only nourishes our body, but also our souls.

Home With God

Ah yes, I can’t wait to be in that home and cook/bake like God. Well maybe not as good as Him, but just try to get to know who God really is aside from what we may believe of Him now.

Since that home is still part of what we’re looking forward to now, here are some of the homecooked meals I prepared for my husband and I the past couple of weeks. I know this lockdown meant appreciating homecooked meals. However, there also lingers the fact that we can all gain that unwanted pounds (uh-oh, here comes the bad part).

It’s a good thing I’m married to a man who’s used to hitting the gym consistently before this lockdown began. So, he gets to motivate me in a way when I see him do some crunches here at home. 😉

Ah, yes, Lord. I just can’t wait to live in Your very extraordinary home. How I longed for nothing else except that every single day. It will come soon, but for now, I’ll try to cook as well as I can possibly be and make other people happy. 😀

Farmers & Traders: What Really Goes On In The Rice Farming Industry

How the agribusiness industry fared throughout the years can be attributed from the bargaining that takes place between the farmer and the trader even before the products leave the farm gate. My family and I have been in the agribusiness, palay production in particular, for decades already. But it was only just recently that I ran a thorough analysis of the business processes involved in farming from the particulars in expenses to the actual farm tasks done.

I asked Dad to give us a rundown of all the marketing processes involved but he told us we’ll learn along the way. I guess this is his way of saying that we conduct due diligence as far as agribusiness is concerned. 😉

From the data I gathered on Dad’s documents, what caught my attention is the market price of palay listed in one of the receipts (16.50php/kg). I asked Dad who dictates the market price and how did it arrive at that figure. He only smiled and said, “The traders dictate the market price.” My follow-up question was, “Based on what?” He answered, “Based on the market trends.”

So, this is just like stock trading on a certain level. But here, if you’re a trader, you have the market power to set the price you desire. Depending on how you conduct your dealings as a businessman, this can either be a good thing or a bad thing as far as fair agricultural trade is concerned. Are traders really fair in dictating the market price for a particular agri product in the region? Does it follow regional market rates or the national market rates?

I haven’t taken any business education courses but I really would love to and if God wills it, I plan to take up a short course on Market Research. For the meantime, I’ve been doing my homework on farmers and middlemen and how the theory of bargaining works in the farming industry. These are the questions I came up with:

  • Are farmers actually getting the profit they should earn from the entire production?
  • Can a digital economy change the agricultural landscape in the coming years and provide better marketing opportunities both for the farmers and traders?
  • Will agricultural innovations and agritech industries promote a brighter future for the farming sector i.e. lower transportation costs, high-yield production, etc.?
  • How can a government-mandated price ceiling affect the overall trading setup between the middlemen and farmers?
  • Can contract farming and direct selling be viable marketing alternatives?
  • How can we prevent the exercise of “monopsony” in marketing rice/palay?

Business Plans: Still Tilling And Waiting On God’s Ways

Thank God yet again for the grace to finish all the tasks set for today. 🙂 First off, I am only running a free domain for this blog so when I finally worked on our family project’s official website, I didn’t expect there’s A LOT to learn. 😀

I am all passionate when it comes to learning though. So I can say I’ve enjoyed every minute I spent putting it together from logo-making to choosing the layout to content organizing. We’re only using the premium plan because I told my siblings I just needed to make my way around building a professional website. When the family project’s fully operational, I plan to upgrade it to the business plan if God wills it.

The entire web designing/developing took me three days to set up. The website’s already live but it still is under construction. You may take a peek though if you’re curious. 😉

I’ll be sharing the developments here on my personal blog first then migrate them there later on. If you’re wondering what this family project is all about, you can check out this article but it’s written in the vernacular. Business Aspects

Now let’s get down to business, technically. 😀 For the technical aspects of the land, it is a 13.5-hectare property divided into two. One half belongs to my Aunt (Mom’s sister) and the other half to my Mom. The opportunity already came to tell my Aunt who’s living in the U.S. about the project. She shared to me a video about a discovery of one consumer on a lettuce that’s made of plastic. I told my Aunt all the more we should pursue organic farming on our property for healthier products.

Organic Farming

Speaking of organic farming, I asked Dad what are the other crops aside from coconut and rice suitable to plant at the farm. I already conducted my research on the consistent top-selling agricultural products for the last 3-4 consecutive years. These products are high-selling due to a high demand. Currently, it’s the same demand (and a dilemma) in our town – the lack of options when it comes to vegetables.

Dad said the majority of the vegetables sold in our local public market came from Manila. This means these vegetables are sold at a relatively high price because it will include the careful packaging, handling, and delivery fees. It takes 17 hours to travel by land from Manila to our town. So by the time it reaches our town, you can expect the vegetables are all in poor condition and of low quality but sold at an expensive price.

I shared with Dad this will be the goal of the project, to supply the demands in our town and sell our products for a fraction of the usual market price but still meet the targeted ROI. How can we achieve that? It’s definitely going to be a trial and error. Release a couple of products in the market and then monitor the generated income on a monthly basis and see if there’s a consistency in the demand and a need to up the supply. If there are higher purchases, it means the market price we have set is fair enough for the consumers. But, easier said than done always. 😉

Down to Early Stages

My siblings and I already have this urge that time is of the essence. The earlier we start, the sooner we can make these plans materialize. But when I asked my Dad how long it’ll take for all the paperwork to be processed for the titling of all his land possessions (current status) including the Oyango Ridge, he said, “Just relax.” lol 😀 This is needed for transferring ownership of land possessions to heirs.

Okay, I get it now. I believe this is why the Bible stated receiving the inheritance at an older age. Why? With older age comes greater wisdom brought by experiences. Even if we think we know it all how to run and manage the company smoothly and successfully, nothing still beats experience as the best teacher.

This is where our parents come in. They don’t make decisions based on impulse and act hastily but make them through guided wisdom. That’s what I am learning now, too. I believe the spiritual gift of the family is more on the gift of prophecy. Mom calls it as foresight. She saw it from our late grandpa who would always act on something when the timing is right. That action will then fulfill an even greater purpose and will only have relevance several years after just like now.

I could still remember my Mom a few years back when she sat me and my sister down to have this “serious” talk about the last will and testament and how the properties will be divided among me and my siblings. My sister and I laughed it off telling her it is still too early to do it, they’re still young and they won’t die yet. Mom was furious and said, “Why are you taking all of these as a joke? This is not a laughing matter because we will never know when the inevitable (dying) will happen. So you all listen because this is a serious topic.” 😀

I believe during that time my Mom already received the prophecy, the foresight. Mom already felt it in her heart that 4 years after, here we are, siblings, actively pursuing our interest to utilize the property. We never got to hear from her that time though how exactly the land will be divided among her 5 children because she reiterated about why the land is important to them and to the family instead. But I believe Mom and Dad prepared what needs to be prepared already.

This is what I am praying for in this endeavor. I pray that may we all be guided by Godly wisdom in pursuing this purpose that God has set in our hearts. May our families have undivided interests and will continue to seek the greater good of everyone. This is actually what I am grateful for now – the active participation of all my siblings to make this project come true. Now, it’s all about waiting for God’s perfect time to execute them one by one and His grace to resolve all challenges we meet along the way.

Challenges and Setbacks

We’ve already had some setbacks and cited several challenges during the business planning. I broke them down into several categories depending on a particular area of the land. We plan to utilize only half of the farm (Mom’s share) and we will still consult with my Aunt’s family what their plans are on their portion of the land. For now, a little portion of the property is being utilized for copra production. We don’t have an estimate yet about the total number of coconut trees (hubby and I were tasked to count and mark them all down one by one on our next visit next month) but we can gather a truckload of produce every 45 days. We already have a team of farmers (I call them our “coco” heroes. 😉 ) helping us with the entire production.

At this point, Mom would like to buy a truck and we can’t see the advantage yet of acquiring one as early as now but I do have hints. Dad is also managing other land assets which are now being utilized as rice fields. They are located in different parts of the town and I think my Mom believes we can cut down on transport fees if we own the truck instead of hiring one to transport all of our produce.

Yes, I know Mom can see the picture pretty clearly already. For us, it’s all a scattered plan. But for her, it’s already one solid project. When Mom decides on something, it usually turns out for the greater good because she’s a very good planner. This is probably the result of having foresight as I mentioned earlier. I am praying I’ll have the same spiritual gift. Mom’s wisdom, come on to me now. 😀

Seriously though, I am praying for God’s wisdom, grace, provision, and timing over all the challenges in this early stage of the project’s development such as what I’ll discuss below.

Technical aspects:

  • Secure a permanent perimeter fence on the entire property.
  • Establish water and electric supply.
  • Facilitate road improvements.
  • Hire a farm help to live at the farm 24/7 just to make sure there are no security breaches or trespassers.

Organic Farming (as per Dad’s advice):

  • Needs to conduct soil analysis to determine the soil type.
  • The soil is made of clay, not perfect for planting any kind of crops.
  • There is an option to plant crops, but the soil analysis will determine the proportion of fertilizers needed for the crops to produce a higher yield.
  • Due to the climate change, the farming calendar has also shifted.
  • The soil analysis will be conducted at the regional office of the Department of Agriculture (3 hrs travel time).

Marketing:

  • Identify the clientele.
  • Select the suitable marketing channels.
  • In-depth study of the ratio of supply and demand.
  • Packaging, handling, and transport measures.
  • Analyze if the ROI in all selected crops including palay and copra is feasible enough to sustain the project’s operations.

That is just stage 1 and we haven’t even started yet because it’s rainy season already. We need dry land for dredging to set up a water source and determine how deep it should go. The same goes for establishing electricity and making road improvements.

Also, Mom suggested there must be a farm help first to make sure no one will tamper with any of the equipment or construction materials brought inside the farm. But, we are still screening the best applicant who is willing, who is reliable, and whom we can trust.

The farm help will be receiving a regular income though with all the mandated government benefits and a monthly allowance of 1 sack of rice. Methinks that is already a suitable offer I am even willing to grab it, myself. But well, I am tied to other obligations for now. 😀

The reason why I am sharing these developments is to provide information about pursuing a business in the agricultural sector on a wider scale. I also wish to hear insights from you, my beloved readers, if you know anything about agribusiness. This season requires I have a mentor who shares the same passion and business goals that we have. I already found one and I am praying for God’s perfect time to conduct a business meeting/fellowship with him. 🙂

He’s none other than Bro. Bo Sanchez. It was only last month when I got to read one of his books and the book was like sitting on my siblings’ bookshelves for decades already. But God’s timing made it possible that I get to read it now at just the right season I’m in. I can relate to all of the experiences and insights he shared even the one which he calls as the “happy poverty.” I’ll touch more on that in the article scheduled two Fridays from now. But what captivated me most was Anawim. More of this, too, in said article.

Next Friday, I’ll be sharing a detailed history of the property and why the desire in our hearts to pursue this family project. But to set things straight, this is not for us because we’re all pursuing our chosen careers. To end this article, I’d like to write down this prayer because I know this endeavor isn’t something that can be done overnight. It’ll require so much from us in all aspects (spiritual, emotional, mental, physical, & financial) and at this point, we would like to ask for your prayers, too. ❤

What Matters

Friday blog post is here! 😀 I guess I need to start every Friday’s blog post with an attitude of gratitude thanking God who gives me the Grace always. 😉 Why? It seldom happens that I am idle and doing nothing. This means I need to find time for my blog and of course, find time for God. 😉 But as always, hindi Nya ako binibigo. Lagi Syang nandyan para alalayan ako.

For the most part of this article, English ang gagamitin kong lenggwahe. ‘Yun ay dahil ni-copy and paste ko lang sila from the caption of my photos over Instagram and tweaked it a bit para maging isang article. 😀

The gist of this article revolves around last holidays’ events (still) since I was hibernating for almost a month in the blogosphere. So, here goes my story. 🙂

I am sure a holiday never passes by na wala tayong natatanggap na regalo. Kahit sabihin nating konti lamang natanggap natin, meron at meron pa din tayong natanggap. However, in my case, I don’t go about counting how many gifts I received. I am even fine in case I don’t receive any.

Why? Let’s just say I am never materialistic because my love language is quality time. I appreciate gifts not based on their worth or brand but based on the sentimental value. Yet I never fail to appreciate all of them because I know they’ve been given thoughtfully.

To our beloved families and friends, our deepest thank you for all your time and effort to shower us with these gifts. This gives us all the more reason to pay it forward. So if you see me using branded stuff, they are not a personal choice but are gifts. 😉

Next in line was the holiday feast – yes, the food coma. *burp* I have made a promise that during the holiday season, one of my ways to express my love for God is to serve others. The best way to serve your family is through the tummy, right? 😃

Though it’s hard to pull off several dishes (chicken skewers, shrimp scampi, embutido, stuffed roasted chicken, beef broccoli, leche flan – not in the pic), I am just grateful to my assistant chefs (Ate Boden and hubby dear) for helping me out in the kitchen. But most importantly, I give thanks to God for giving me the grace to do it. ☝❤

“Each of you should use whatever gift you have received to serve others, as faithful stewards of God’s grace in its various forms.” – 1 Peter 4:10

This was the reason why I was hibernating on social media during the holiday season. I was very busy in the kitchen because having good food on the table means longer conversations a.k.a. meaningful, priceless moments with the family. This is something that social media can never offer – genuine moments and memories made along with your loved ones.

The cake’s not mine though because baking’s not my cup of tea. I am also not a lover of cakes but my Mom is the ultimate fan so there went Goldilocks’ Rocky Road. 😀

For the latter part of the holidays and the early part of January, hubby and I spent quality time with my second sister, Ate Ayn, and her Norwegian hubby, Kuya TK (they recently got married! Yay!). One of these photos was taken after our church service at Victory Fort.

Ah yes, this is just one of my answered prayers for my second sister – to have a lifelong companion who will be her prayer partner and who will share in her ups and downs, in sickness and in health ’til death parts them both. I am just grateful for this especially since she lives in Norway and we have no relatives there.

Indeed Lord, despite all the troubles we faced, You always give us a reason to smile, be grateful, and know Your goodness. Thank You for everything You’ve done for me, my hubby, and our families. All of us will remain to worship You as our one and only GOD in our lives.

Real treasures aren’t really those that are tangible but those that lay hidden in the depths of our souls and our hearts. They are what matters to God.

“..but the worries of this life, the deceitfulness of wealth and the desires for other things come in and choke the Word, making it unfruitful.” – Mark 4:19

May we all not be pierced with so many sorrows brought about by the complexities of our own worldly choices. But may our minds be renewed so we can live in utmost freedom savoring the very essence of salvation – the priceless, most beautiful gift we have received and we can ever receive. ❤

Roasted Chicken A la Bicolana

I was supposed to write this article last December but the holiday rush, preparation and celebration with the family kept me from doing so.

This article though came in timely as my previous articles for this month were all about gifts (not your usual gift in a box with a ribbon) and the value of serving others through your gifts. I actually didn’t expect that last Sunday’s lecture will also be about that. Ah yes, it always is a wonder how things can be intertwined all because of God’s mysterious ways. 🙂

What is serving and how can we serve in a biblical sense?

“For even the Son of Man did not come to be served, but to serve, and to give His life as a ransom for many.” – Mark 10:45

“…and whoever wants to be first must be your slave—just as the Son of Man did not come to be served, but to serve, and to give His life as a ransom for many.” – Matthew 20:27-28

And the King will say, ‘I tell you the truth, when you did it to one of the least of these my brothers and sisters, you were doing it to me!’ – Matthew 25:40

I believe one way of honoring God and showing our thanks to Him is by sharing that love to others too. Let’s just say that you felt how much God loves you and it is just too wonderful to keep it to yourself that’s why you wanted to let others know and feel that kind of love as well.

In doing so, they might wonder what is it that’s been fueling your actions and though they might not understand it at first, this can be your perfect response – out of love.

“We love because He first loved us.” – 1 John 4:19

In the aspect of serving, we do find ourselves doing that knowingly or unknowingly with our families first and foremost. So last Christmas, I thought about preparing this roasted chicken recipe which was the first in the family’s Christmas celebration tradition.

Do take note though that I am no chef. lol 😀

I was just inspired and taught by my 3 older sisters who are very good in the kitchen and have such superb cooking skills they can invent their own recipe. Yup, no kidding. They really are that good.

Being the youngest, I grew up being the dishwasher. Haha Yes, you won’t believe it but my brother and I take turns in washing the dishes when we were younger. We are the two youngest members in the family, by the way.

On a side note, I just love being in a big family. You might not get to see or talk to all of them at the same time, yet you’ll still have one sibling to bug about every week aside from your parents. 😀

Anyway, as for my roasted chicken recipe, let’s just say I combined all the roasted chicken recipes I could find over the internet and came up with a “hybrid” roasted chicken. 😉

Roasted Chicken

Roasted Chicken A la Bicolana

Here’s the recipe:

Ingredients:

1 whole chicken

1 bunch of lemongrass

1 cup butter

½ cup tomato ketchup

1 cup soy sauce

2 teaspoons Worcestershire sauce

3 tablespoons sugar

2 tablespoons salt

5 cloves whole garlic

2 teaspoons slightly crushed black pepper

4 onions cut into 4 parts

Procedure:

  1. Combine all the ingredients except for butter.
  2. Place the onions, garlic and lemongrass inside the chicken and marinate overnight.
  3. Prepare the butter and remaining marinade for basting.
  4. Preheat your oven to 400 degrees Farenheit and cook for about 1 hour or until the chicken is tender.
  5. Top it with garnishing, serve and enjoy!

I intend to make this a yearly tradition – out of love for God, love for family and joy in serving others. 🙂

Oh and one mistake from the roasted chicken recipe – don’t prepare 1 roasted chicken ONLY especially when there are about 8 persons hoping to try it. lol 

I was expecting it to be served as an additional dish along with other meals but it became the main course – ooopps, my mistake. So yes, Mom wasn’t able to try it as she ate late and sadly, no roasted chicken leftover. I have this year to make up for it though. 😀

One thing more, the turbo broiler is a kitchen winner for me, nothing beats. ❤

Perfectly Roasted To Goodness: Coffee Tonya Roaster

Yes, I woke up to the aroma of freshly roasted coffee beans from yesterday’s coffee adventure with my hubby around our neighborhood, thus, the photos and the feature. The scent of roasted coffee beans lingered in the four corners of our apartment since yesterday. No wonder I couldn’t blame coffee lovers for being this addicted to coffee.

Near our place there’s a Japanese coffee store where they sell anything and everything coffee-related from roasted coffee, coffee in bags, teacups, tumblers, coffee maker, etc. Every time we pass by, I am always reminded of my hubby’s Mom who’s a coffee lover. We always pass up the opportunity to drop by though because we’re always on an errand and need to hurry except yesterday. I am no coffee addict but the smell of freshly roasted coffee beans is just irresistibly enticing.  We’re giving it to my Mom-in-law when we visit her today and hoping she likes it. 🙂

They gave us two free iced coffee drinks too, by the way. I asked hubby to try it alone but he said we’ll try it when we get home – we were loaded with stuff from that day’s errands. When we got home I had a couple of sips and was surprised that it actually tasted so good. One thing more, they gave us 4 sachets of coffee bags for free. Thanks, Coffee Tonya. We only went there to buy coffee for his Mom and ended up going home with lots of freebies. God is good, ain’t He? *wink*

Hubby and I bought 100g of Brazil Bourbon which, according to one of the store clerks, has a little bit of chocolate and sweet flavors. She recommends this one to those opting for coffee with a milder taste. Of course, we couldn’t pass up Coffee Tonya‘s very own special coffee in bags too.

They also have a cafe where you, your friends and families can cozily lounge around.

The reason why I am not a coffee lover is because I am a nocturnal person and too much caffeine, even if it’s just a cup, will make me sleepless for the entire night. But I can take it in smaller quantities though, it won’t affect my sleeping pattern. That’s one trivia you got there about me. 😀

Expressing The Bicolana In Me: BICOL EXPRESS

It’s been quite a while since I last posted about food (I love food but I hate gluttony thus striking the balance)  and I bet it is time I post one of my recipes. Not exactly my recipe as this is a traditional dish from my hometown in the Bicol region. Thus, where the name Bicol Express was derived.

You will commonly see this dish served during meal time in our home in Bicol. My Mom and Dad always make this as a side dish which perfectly partners with any viand. There are now a lot of variations of this recipe including the one with coconut milk which contains more meat and less green chilies.

I grew up getting used to this dish prepared and cooked having only 3 main ingredients: lots of green chilies, fresh shrimp paste, and pork meat. It’s also very easy to prepare as you’d only need to saute the pork meat along with garlic, add the fresh shrimp paste until cooked and lastly, put in the green chilies. Then wait until the aroma of the chilies come out and it’s ready to be served.

To give you a background on my cooking experience, it was only when I was 20 years old that I started learning how to cook. I am the youngest among 5 siblings and I have 3 older sisters who are amazing in the kitchen – I ended up being the dishwasher and the kitchen assistant (prep the ingredients). lol

My sisters though knew I needed to learn sooner or later as time will come we’ll all go our separate ways one by one and I need to hone my cooking skills to be able to live and survive independently.

They’ve been such great teachers who raised me to who I am now in behalf of my Mom as she and Dad stayed in our hometown in Bicol starting when I turned 16 and came here in Manila to study in college. The cooking skills I’ve acquired from them proved to be of great help now that I am married – got to please my hubby’s tummy. *wink*

It is, therefore, with such gratitude that I give back to God for blessing me with awesome siblings and to my sisters for teaching me the art of cooking and with everything else.

The ANOINTING OIL and More Memories

It was after our family vacation with my husband’s family last weekend that I got hold of something interesting. We went to Baguio City in the upper north of the Philippines where the weather is particularly colder than in any part of the country.

Baguio Escapade 2015

We also stayed at Hotel Veniz which is located near the heart of the city popularly known for its night flea markets. My husband and I pretty much enjoyed buying stuff at such an affordable price – it was a hassle though packing them up as it added to our already bulky baggage. But it still was fun haggling for lower prices and yes, eating street food. Now this last part I must definitely say THE highlight of our last night there.

We were all tired after the vacation and it was during the last day at my in laws’ house where I got hold of one of the most interesting pieces of memorabilia that I didn’t quite expect after receiving my first memorabilia from the Holy Land which is the Spikenard Magdalena perfume thru my husband’s Dad.

My mother-in-law gave me Bible Land Treasures’  The Anointing Oil as one of their presents which I am very grateful for. A good God we indeed have. 🙂

As of right now, I haven’t had the slightest idea as to what God’s purposes are why I have to get hold of these two important elements in the bible which is significant in our history on how Christianity started – particularly that of Jesus and the Cross. It is very humbling though that God gave me this privilege to be able to know these elements for real, have an idea how they smelled, what they look like and where and how they were used.

The Anointing Oil smelled more delicate and milder than the Spikenard Magdalena perfume which is a combination of frankincense, myrrh and spikenard. It also has a lighter color as compared to the perfume and less concentrated. I have used the perfume twice already but I haven’t used the anointing oil yet.

Having shared this, I am now in need of your heartfelt prayers for the Spirit’s leading where these elements can be put into good use, not just for me, but for others as well – that in serving God’s will and purpose. 🙂
